The Texas-based chain now has more than 50 stores across nine states, and it’s gaining national attention as a must-do stop, no matter your final destination. (Buc-ee’s has even been the final destination for my family on more than one occasion!)

But Buc-ee’s is so much more than a gas station and a convenience store. It’s like if a mall and a barbecue restaurant had a baby—then added in some of the cleanest bathrooms in America as a bonus.

While browsing thousands of square feet of retail space and adding Buc-ee’s merchandise like bathing suits and keychains to your basket, you might hear a strong, booming voice echoing throughout the store. The loud Buc-ee’s chant you might hear is “Fresh brisket on the board!” It’ll be bellowed by one of the brisket carving employees wearing a cowboy hat. It might also be said as “Fresh, hot brisket on the board!” depending on who is saying it and their style—because each carver adds his or her own flair to the announcement.

What might surprise you is to hear the whole store, employees and some customers who are in the know echo it back in a call-and-response. It’s a unique and entertaining way to corral people to the carving station, and even celebrities like Keith Urban have gotten in on the fun.

This chant means that the carvers are letting everyone in the store know that fresh meat has made it to the carving board, allowing for the hottest, freshest sandwiches, tacos and burritos. Because hot brisket hits the board several times an hour, an average Buc-ee’s trip will have you hearing it at least once. It’s OK to order the brisket if you don’t hear the chant, because chances are likely that what’s on the board has only been there about 15 minutes at most.

Buc-ee’s fans go wild over nearly every item, fighting among themselves to crown “the best” snack or meal, whether it’s the sweet, salty and satisfying corn Beaver Nuggets, a caramel-coated puffed corn snack, savory kolaches, pastry-wrapped sausages or a supercharged XXL Brisket Sandwich. My personal favorites are the Pretzel, Cheese and Pepper Turkey Cup, Brisket Breakfast Tacos and Key Lime Pie Cup, and sometimes I go nuts and order all three, because it’s my personal philosophy that money isn’t real at a Buc-ee’s. Any way you slice it, Buc-ee’s is a worthy road trip stop.
